INGREDIENTS
- 160g packet salted caramel Tim Tams
- 2 cups self-raising flour
- 1/4 teaspoon bicarbonate of soda
- 1/4 cup caster sugar
- 1 1/2 cups milk
- 1 egg
- 1 teaspoon vanilla extract
- 40g butter, melted
- Coles caramel dream ice-cream & chocolate sauce, to serve
METHOD
Step 1
Reserve 4 whole Tim Tams. Place remaining Tim Tams in a food processor. Process until coarse crumbs.
Step 2
Whisk flour, bicarbonate of soda and sugar in a bowl. Whisk milk, egg and vanilla in a medium jug. Add milk mixture to flour mixture. Whisk until just combined.
Step 3
Heat a large non-stick frying pan over medium heat. Brush pan with melted butter. Place 1/4 cup of batter into pan. Repeat to make 4 pancakes in total. Sprinkle with a little of the Tim Tam crumbs. Cook for 2 to 3 minutes or until bubbles appear on the surface. Turn and cook for 2 minutes or until cooked through. Transfer to a plate. Cover loosely to keep warm. Repeat with remaining batter and most of the Tim Tam crumbs, brushing pan with melted butter between batches.
Step 4
Cut reserved Tim Tams into shards. Divide pancakes among serving plates. Top with ice-cream, chocolate sauce, Tim Tam shards and remaining Tim Tam crumbs and serve.
